Ingredients
  

Main Ingredients
  • 350 g long beans or French green beans, cut into 2-inch pieces Look for vibrant, firm beans without bruises.
  • 2 Tbsp neutral oil (like canola or vegetable oil)
  • 4 cloves garlic, chopped
  • 1 salted duck egg salted duck egg (optional, but highly recommended for creaminess) Adds incredible richness.
Sauce Ingredients
  • 1 Tbsp oyster sauce Using a high-quality brand enhances the flavor.
  • 1 Tbsp soy sauce Recommended brand: Kikkoman.
  • 1 tsp Golden Mountain sauce (or fish sauce)
  • 1 tsp shrimp paste in oil (optional) Adds richness.
  • 1.5 tsp sugar
  • 0.25 tsp white pepper
  • 0.25 cup water Adjust as needed for the desired saucy consistency.

Method
 

Preparation
  1. In a small bowl, mix together oyster sauce, soy sauce, Golden Mountain sauce, shrimp paste (if using), ΒΌ cup of water, sugar, and white pepper. Stir until the sugar is dissolved.
  2. If using a salted duck egg, cut it in half and prepare it for mixing into the stir-fry.
  3. Ensure all your ingredients are prepped before you start cooking.
Cooking
  1. In a wok over medium-high heat, add the neutral oil and chopped garlic. Stir until the garlic turns golden and fragrant.
  2. Quickly toss the cut long beans into the wok. Stir-fry for about 2-3 minutes until they are bright green and tender-crisp.
  3. Pour the sauce mixture over the beans. Stir to coat. If the mixture is too thick, add more water.
  4. If using salted duck eggs, add the chunks to the wok and stir gently to combine. Cook for another minute.
  5. Transfer the stir-fry to a serving dish and top with wedges of the remaining salted duck egg. Serve hot over jasmine rice.

Notes

This dish is quick and can be customized with additional veggies or proteins. Store leftovers in an airtight container for up to 3 days. Best served fresh.
