Cook the Beef Mixture
- Heat a large skillet over medium-high heat. Add ground beef and diced onion. Cook for 6-8 minutes, breaking up the meat as it cooks until browned and onions are translucent.
- Stir in tomato paste and taco seasoning. Mix well for about 2 minutes. If too thick, add 1-2 tbsp of water to reach desired consistency.
Prepare the Avocados
- While the beef is cooking, halve the avocados and remove the pits. Scoop out a bit of flesh if desired.
Stuff the Avocados
- Fill each avocado half generously with the seasoned beef mixture.
Top and Serve
- Top the stuffed avocados with shredded lettuce, pico de gallo, shredded cheese, and a drizzle of salsa.
