Ingredients
  

For the Beef Filling
  • 1/2 lb 95% lean ground beef Choose high-quality meat for better flavor. Can substitute with ground turkey or chicken.
  • 1/4 cup onion, diced Freshly diced onions add sweetness.
  • 1 tbsp tomato paste Adds depth and sweetness.
  • 1.5 tbsp taco seasoning Use homemade or high-quality store-bought.
For Assembling
  • 4 pieces ripe avocados Ensure they’re ripe for easy scooping.
  • 1 cup shredded lettuce Crisp romaine or iceberg for crunch.
  • 1/2 cup pico de gallo Fresh salsa adds vibrancy.
  • 1/2 cup shredded cheddar cheese Choice of sharp or mild based on preference.
  • 1/4 cup salsa (red or green) Adds taco flavors.

Method
 

Cook the Beef Mixture
  1. Heat a large skillet over medium-high heat. Add ground beef and diced onion. Cook for 6-8 minutes, breaking up the meat as it cooks until browned and onions are translucent.
  2. Stir in tomato paste and taco seasoning. Mix well for about 2 minutes. If too thick, add 1-2 tbsp of water to reach desired consistency.
Prepare the Avocados
  1. While the beef is cooking, halve the avocados and remove the pits. Scoop out a bit of flesh if desired.
Stuff the Avocados
  1. Fill each avocado half generously with the seasoned beef mixture.
Top and Serve
  1. Top the stuffed avocados with shredded lettuce, pico de gallo, shredded cheese, and a drizzle of salsa.

Notes

For make-ahead options, store the beef mixture in the refrigerator for up to 3 days. To prevent avocado browning, store in an airtight container with pits and drizzle with lemon juice.
