Ingredients
  

For the Stir-Fried Noodles
  • 200 g noodles (e.g., rice noodles or egg noodles) Choose high-quality noodles for the best texture and taste.
  • 2 tablespoons vegetable oil Any neutral oil works well; recommended are sunflower or canola oil.
  • 2 cloves garlic, minced Fresh garlic adds an addictive aroma and flavor.
  • 1 cup mixed vegetables (e.g., bell peppers, carrots, broccoli, snap peas) Fresh vegetables make all the difference.
  • 2 tablespoons soy sauce Use regular or low-sodium based on preference.
  • 1 tablespoon oyster sauce (optional) Adds a deep, umami flavor; skip for vegetarian.
  • 1 teaspoon sesame oil Adds a rich, nutty flavor.
  • to taste salt and pepper For seasoning.
  • Green onions, chopped for garnish Adds freshness and a lovely crunch.

Method
 

Cooking the Noodles
  1. Cook the noodles according to package instructions, usually taking about 5-7 minutes. Drain and set aside.
  2. Rinse them under cold water to prevent sticking.
Heating the Skillet
  1. In a large skillet or wok, heat the vegetable oil over medium heat until shimmering but not smoking (about 1-2 minutes).
Sautéing and Combining
  1. Add the minced garlic and sauté for 30 seconds, stirring continuously until fragrant.
  2. Add the mixed vegetables and stir-fry for about 3-5 minutes, or until they are tender-crisp.
  3. Stir in the cooked noodles along with soy sauce, oyster sauce (if using), and sesame oil. Mix until noodles are evenly coated.
  4. Toss to combine and heat everything through, seasoning with salt and pepper to taste.
Garnishing and Serving
  1. Remove from heat and garnish with chopped green onions. Serve immediately.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat with a splash of water or oil to avoid drying out.
