Method
Cooking the Noodles
- Cook the noodles according to package instructions, usually taking about 5-7 minutes. Drain and set aside.
- Rinse them under cold water to prevent sticking.
Heating the Skillet
- In a large skillet or wok, heat the vegetable oil over medium heat until shimmering but not smoking (about 1-2 minutes).
Sautéing and Combining
- Add the minced garlic and sauté for 30 seconds, stirring continuously until fragrant.
- Add the mixed vegetables and stir-fry for about 3-5 minutes, or until they are tender-crisp.
- Stir in the cooked noodles along with soy sauce, oyster sauce (if using), and sesame oil. Mix until noodles are evenly coated.
- Toss to combine and heat everything through, seasoning with salt and pepper to taste.
Garnishing and Serving
- Remove from heat and garnish with chopped green onions. Serve immediately.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat with a splash of water or oil to avoid drying out.
