Ingredients

Main Ingredients
  • 2 cups cooked chicken, shredded Use rotisserie chicken or grilled chicken breast for the juiciest flavor.
  • 1 can black beans, drained and rinsed Great source of protein that adds heartiness.
  • 1 cup corn, frozen or canned For a touch of sweetness.
  • 1 cup diced tomatoes Feel free to use fresh or canned tomatoes for convenience.
  • 1 cup shredded cheese A zesty Mexican blend is recommended for extra flavor.
  • 1 packet taco seasoning Look for low-sodium options for a healthier twist.
  • 1 cup sour cream Greek yogurt works as a perfect substitute.
  • 1 cup tortilla chips, crushed For that delightful crunch on top.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and let it preheat while you prepare the ingredients.
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes, taco seasoning, and sour cream. Stir until well blended.
  3. In a greased baking dish (an 8x8 or 9x13 works perfectly), spread out the chicken mixture evenly.
  4. Generously sprinkle shredded cheese on top, followed by a layer of crushed tortilla chips.
  5. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  6. Once baked, let it cool for a few minutes before serving to avoid burning your tongue.

Notes

Keep an eye on your casserole during the last few minutes to ensure the cheese doesn't burn. Use quality ingredients for a richer flavor, and consider making it ahead of time.
