  • 1 can black beans Drained and rinsed. Can also use pinto beans if preferred.
  • 1 can corn Drained. Sweet kernel corn adds texture.
  • 1 can diced tomatoes with green chilies Recommended brand: Rotel, preferably mild.
  • 1 packet taco seasoning Feel free to use homemade if you prefer.
  • 1 cup chicken broth Opt for low-sodium broth for better flavor control.
  • 1 unit bell pepper, chopped Any color is fine—red, yellow, or green.
  • 1 unit onion, chopped For aromatic goodness.

Preparation
  1. Place the chicken breast in the slow cooker, laying them flat for even cooking.
  2. Add black beans, corn, diced tomatoes, taco seasoning, chicken broth, bell pepper, and onion.
  3. Stir to combine all ingredients gently to ensure even seasoning.
Cooking
  1. Cover and cook on low for 360 to 480 minutes (6-8 hours) or high for 180 to 240 minutes (3-4 hours). Monitor cooking times accordingly.
  2. Shred the chicken in the slow cooker using two forks, allowing it to soak in the juices.
Serving
  1. Serve with rice or tortillas, and top with fresh avocado, cilantro, or cheese.

Notes

Make ahead by assembling all ingredients in the slow cooker insert the night before. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for 3 months. Adjust spice levels as needed by adding jalapeños or hot sauce.
