  • 8 oz noodles (your choice, e.g., thin spaghetti or soba) Opt for high-quality noodles for best texture.
  • 2 tbsp sesame oil Preferably toasted for extra flavor.
  • 4 cloves garlic, minced Fresh garlic makes all the difference.
  • 3 tbsp soy sauce Tamari can be used for gluten-free option.
  • 1 tbsp rice vinegar Adds a nice tang.
  • 1 tbsp honey or sugar Adjust sweetness to taste.
  • 2 green onions, sliced For added freshness.
  • sesame seeds for garnish Toasted sesame seeds are ideal.

Method
 

Preparation
  1. Cook the noodles according to the package instructions, usually 7-9 minutes for al dente.
  2. Drain the noodles and set aside.
Cooking
  1. In a large skillet, heat the sesame oil over medium heat until it shimmers.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Pour in the soy sauce, rice vinegar, and honey (or sugar). Stir and simmer for another minute.
  4. Add the cooked noodles and toss to coat them evenly with the sauce for about 2-3 minutes.
  5. Stir in the sliced green onions and remove from heat.
  6. Serve the noodles garnished with sesame seeds while hot.

Notes

These noodles make a great standalone dish but can be paired with steamed vegetables or crispy tofu. They're perfect for weeknight dinners or meal prep.
