  • as much as you want slices Chinese sausage Look for the sweet variety for added flavor
  • as much as you want slices Vietnamese ham (cha lua)
  • 1 serving seasoned ground meat See below for details
  • to taste Sriracha hot sauce, ketchup, white or black pepper, Maggi Seasoning Optional toppings
For the Seasoned Ground Meat
  • 120 g ground pork, beef, or chicken Choose your preferred protein
  • ½ Tbsp oyster sauce Adds a rich umami flavor
  • 1 tsp Maggi Seasoning or Golden Mountain Sauce
  • 1 clove garlic, finely grated Optional, for a flavor boost
  • ½ piece green onion, chopped For the meat mixture and as garnish

Method

Preparation
  1. Prepare the seasoned ground meat: Combine the ground pork (or your choice), oyster sauce, Maggi Seasoning, and garlic (if using) in a bowl. Mix thoroughly.
  2. Add a little water to a sauté pan and bring it to a boil. Add the meat mixture and cook on medium heat, stirring constantly to break up any lumps until fully cooked (about 5-7 minutes). Remove from heat and stir in chopped green onions.
  3. Slice your Chinese sausages and Vietnamese ham thinly. In another greased pan over medium heat, sear these slices just until they are browned (2-3 minutes) and set aside.
Cooking
  1. Heat your cast-iron pan (or oven-proof dish) over medium-low heat. Add the butter; let it melt and watch for bubbling.
  2. Carefully crack the eggs into the pan. Layer on the cooked sausages, Vietnamese ham, and seasoned ground meat, ensuring even distribution.
  3. Cover the pan with a lid or a large plate to trap steam and help eggs cook evenly. Cook until the whites are set and yolks are as desired (about 5-8 minutes). Remove from heat and garnish with extra green onions and a sprinkle of pepper.
Serving
  1. Serve with your favorite bread and condiments like Sriracha or ketchup. Enjoy!

Notes

Best served fresh, but can store leftovers in the fridge for up to 2 days. Reheat gently to avoid rubbery eggs.
