  • 4 fillets salmon fillets Use similar thickness for even cooking.
  • 4 cups mixed vegetables Broccoli, green beans, asparagus, brussels sprouts, zucchini, etc.
  • 4 tablespoons butter Melted for the garlic butter.
  • 3 cloves garlic Minced.
  • 1 whole lemon Juice and zest needed.
  • 1 cup Parmesan cheese Finely grated for best melt.
  • 2 tablespoons olive oil For tossing vegetables.
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Nice Extras
  • 1 tablespoon chopped parsley For garnish.
  • 1 teaspoon paprika Optional for color.
  • 1 teaspoon Italian seasoning Optional for extra flavor.
  • 1 teaspoon Dijon mustard Optional, adds nice flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or foil, lightly oiled if using foil.
  2. Toss the mixed vegetables with olive oil, salt, and black pepper directly on the sheet pan. Spread them out to ensure they crisp.
  3. In a bowl, melt the butter and mix in minced garlic, lemon zest, lemon juice, salt, and pepper.
  4. Place the salmon fillets on the pan and brush or spoon the lemon garlic butter mixture over them.
  5. Sprinkle finely grated Parmesan over the salmon in an even layer.
Cooking
  1. Bake in the preheated oven for 12 to 16 minutes, or until the salmon flakes easily with a fork.
  2. After baking, if desired, broil for an additional 1 to 2 minutes to crisp the top, monitoring closely to prevent burning.
  3. Finish with a squeeze of fresh lemon and a sprinkle of chopped parsley before serving.

Notes

Serve directly from the pan for a cozy dinner. Keep veggies spread out for proper crisping. Adjust bake time based on the thickness of the salmon.
