Ingredients

For the seasoning mix
  • 1 tsp dried parsley
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 3/4 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp dried fennel
  • 1/4 tsp red pepper flakes optional for heat
For the meat
  • 1 lb 95 percent lean ground beef (or turkey, chicken, or pork)

Method

Preparation
  1. In a bowl, combine all the spices: dried parsley, Italian seasoning, garlic powder, onion powder, kosher salt, black pepper, paprika, fennel, and red pepper flakes (if using). Mix them together thoroughly until well blended.
  2. In a large mixing bowl, add your pound of ground meat (beef, turkey, chicken, or pork). Sprinkle the spice mixture evenly over the top. With clean hands or a spatula, mix until the meat and spices are well combined. Don’t overmix, as this can lead to a tough texture.
Cooking
  1. You can now cook your seasoned meat! If you want crumbled sausage, heat a skillet over medium heat and add the meat. Cook for about 8-10 minutes, breaking it apart with a spatula until browned. If you prefer patties or meatballs, shape them to your liking and cook until they reach an internal temperature of 160°F (for beef) or 165°F (for poultry).
