  • 2 cups cauliflower rice Fresh or frozen works great!
  • 1 lb chicken breast, cooked and shredded Using rotisserie chicken is an easy shortcut.
  • 1 cup broccoli florets Fresh or frozen, bite-sized.
  • 1 cup shredded cheese (cheddar or mozzarella) High-quality cheese adds richer flavor.
  • 1 cup chicken broth Low-sodium options are best.
Spices
  • 1 teaspoon garlic powder For aromatic flavor.
  • 1 teaspoon onion powder Adds depth to flavor.
  • to taste salt and pepper Adjust based on preference.
For Greasing
  • to taste olive oil Extra virgin preferred for its flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a baking dish with olive oil.
  2. In a large bowl, combine chicken, cauliflower rice, broccoli, half of the cheese, chicken broth, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Pour the mixture into the prepared baking dish and spread it out evenly.
  4. Top with the remaining cheese.
Baking
  1. Cover with foil and bake for 30 minutes to meld flavors.
  2. Remove foil and bake for an additional 15 minutes until the top is golden.
  3. Let it cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Can also be assembled a day in advance.
