Ground Turkey and Zucchini Stir Fry

A quick and healthy weeknight meal featuring lean ground turkey and fresh zucchini, all tossed in a flavorful sauce.

Ingredients
  

For the Sauce
  • 1/4 cup low sodium soy sauce Use low sodium to control the saltiness.
  • 2 tbsp honey Local honey can add a unique flavor.
  • 2 tbsp water Helps to thin the sauce out a bit.
  • 2 tsp toasted sesame oil Adds a lovely, nutty aroma.
  • 2 cloves garlic, minced Fresh garlic packs the best punch.
  • 2 tsp rice vinegar Gives that tangy flair; apple cider vinegar can be a substitute.
  • 2 tsp ginger, minced or frozen cubes Fresh ginger brings warmth and zest.
  • 2 tsp Sriracha Add more if you like it spicy.
  • 1 tbsp cornstarch For thickening the sauce.
For the Stir Fry
  • 1 tbsp olive oil A versatile oil for cooking.
  • 6 stalks green onions, sliced Adds a fresh crunch and a mild onion flavor.
  • 2 medium zucchini, sliced into half moons Zucchini is mild and complements the turkey beautifully.
  • 1.33 lb 93 percent lean ground turkey Lean turkey provides protein without too much fat.

Method
 

Mix the Sauce
  1. In a small container, whisk together the soy sauce, honey, water, toasted sesame oil, garlic, rice vinegar, ginger, Sriracha, and cornstarch until smooth.
  2. Taste and adjust seasoning if you like a stronger flavor.
Sauté Vegetables
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the green onions and zucchini, cooking for 4-5 minutes until the zucchini is tender but still crisp.
  3. Remove from the skillet and set aside.
Cook the Turkey
  1. In the same skillet, add the ground turkey.
  2. Cook for about 6-8 minutes, breaking it up with a wooden spoon, until browned and cooked through.
Combine it All
  1. Add the sautéed zucchini and the sauce mixture back into the skillet.
  2. Bring everything to a gentle simmer and cook for another 2-3 minutes until the sauce thickens to your liking.
Serve and Enjoy
  1. Plate your stir fry warm, sprinkling a few additional slices of green onion on top for presentation.

Notes

Storage: This stir fry is best enjoyed fresh. However, leftovers can be stored in an airtight container in the fridge for up to 3 days.
