Method
Mix the Sauce
- In a small container, whisk together the soy sauce, honey, water, toasted sesame oil, garlic, rice vinegar, ginger, Sriracha, and cornstarch until smooth.
- Taste and adjust seasoning if you like a stronger flavor.
Sauté Vegetables
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the green onions and zucchini, cooking for 4-5 minutes until the zucchini is tender but still crisp.
- Remove from the skillet and set aside.
Cook the Turkey
- In the same skillet, add the ground turkey.
- Cook for about 6-8 minutes, breaking it up with a wooden spoon, until browned and cooked through.
Combine it All
- Add the sautéed zucchini and the sauce mixture back into the skillet.
- Bring everything to a gentle simmer and cook for another 2-3 minutes until the sauce thickens to your liking.
Serve and Enjoy
- Plate your stir fry warm, sprinkling a few additional slices of green onion on top for presentation.
Notes
Storage: This stir fry is best enjoyed fresh. However, leftovers can be stored in an airtight container in the fridge for up to 3 days.
