Method
Cooking the Beef
- Heat a large nonstick skillet over medium-high heat. Add ground beef and cook until browned and crumbled, about 8-10 minutes, then drain excess grease.
- Add diced onion to the skillet and cook until soft and translucent, about 3 minutes.
- Sprinkle taco seasoning over the beef, mix well, add water, and cook until mixture thickens slightly, about 2-3 minutes.
Assembling the Casserole
- Preheat oven to 350°F (175°C) and spray a 9x13 inch baking dish with cooking spray.
- Cover the bottom of the baking dish with about 2 cups of crushed Doritos.
- Spread half the beef mixture over the Doritos, followed by half of the shredded cheese.
- Layer on another 2 cups of crushed Doritos, then cover with the remaining beef mixture.
- Top with the remaining cheese and then add the last 2 cups of crushed Doritos for a crispy topping.
- Bake in preheated oven for about 25 minutes, or until cheese is bubbly and golden.
- For an extra crispy top, broil for an additional 2-3 minutes, watching closely.
Notes
Leftovers can be stored in the fridge for up to 3 days. Reheat in the oven or microwave. You can also assemble the casserole a day ahead.
