Ground Beef Doritos Casserole

Ingredients
  

Main Ingredients
  • 1.5-2 pounds ground beef Use 80/20 for a perfect balance of flavor and moisture.
  • 1 medium onion, diced Adds sweetness and depth.
  • 2 packets taco seasoning Use store-bought or homemade.
  • 2/3 cup water Helps cook the beef and seasonings.
  • 1 10-ounce can Rotel tomatoes with green chilies Adds a great kick and moisture.
  • 1/2-1 cup black beans, rinsed and drained Great source of protein and fiber; can substitute with pinto beans or corn.
  • 1 cup sour cream Greek yogurt can be used as a tangy alternative.
  • 1 large bag Nacho Cheese Flavored Doritos The star of the show!
  • 3 cups shredded Mexican cheese Cheddar or pepper jack work wonderfully.
  • to taste chopped fresh cilantro for serving Brightens up the dish.
  • to taste black olives, shredded iceberg lettuce, pickled jalapeños, and salsa for serving Fresh toppings for flavor.

Method
 

Cooking the Beef
  1. Heat a large nonstick skillet over medium-high heat. Add ground beef and cook until browned and crumbled, about 8-10 minutes, then drain excess grease.
  2. Add diced onion to the skillet and cook until soft and translucent, about 3 minutes.
  3. Sprinkle taco seasoning over the beef, mix well, add water, and cook until mixture thickens slightly, about 2-3 minutes.
Assembling the Casserole
  1. Preheat oven to 350°F (175°C) and spray a 9x13 inch baking dish with cooking spray.
  2. Cover the bottom of the baking dish with about 2 cups of crushed Doritos.
  3. Spread half the beef mixture over the Doritos, followed by half of the shredded cheese.
  4. Layer on another 2 cups of crushed Doritos, then cover with the remaining beef mixture.
  5. Top with the remaining cheese and then add the last 2 cups of crushed Doritos for a crispy topping.
  6. Bake in preheated oven for about 25 minutes, or until cheese is bubbly and golden.
  7. For an extra crispy top, broil for an additional 2-3 minutes, watching closely.

Notes

Leftovers can be stored in the fridge for up to 3 days. Reheat in the oven or microwave. You can also assemble the casserole a day ahead.
