Ingredients
  

For the shrimp
  • 1 pound peeled and deveined shrimp tails off for easier eating
  • 2 tablespoons olive oil helps seasoning stick
  • 1 tablespoon lime juice adds flavor
  • 1 clove garlic fresh or powder works
  • 1 teaspoon chili powder or taco seasoning for warmth and color
  • to taste salt and pepper essential for flavor
  • 8 tortillas corn for classic flavor, flour for soft
For the mango salsa
  • 1 ripe mango, diced should give slightly when pressed
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped optional, adjust to taste
  • 1 jalapeno, diced optional, adjust for heat
  • 2 tablespoons lime juice
  • a pinch salt
  • 1/2 cup diced cucumber optional for extra crunch
For creamy topping (optional)
  • 1/2 cup Greek yogurt or sour cream mixed with lime juice and salt

Method
 

Preparation
  1. Make the mango salsa first and let it sit while you prepare the shrimp.
  2. Prepare the shrimp by mixing olive oil, lime juice, garlic, chili powder, salt, and pepper.
  3. Grill the shrimp on a hot grill pan or outdoor grill for about 2 minutes per side until pink and plump.
  4. Warm the tortillas on the grill for about 10 to 15 seconds on each side.
  5. Assemble the tacos by layering shredded cabbage or lettuce, grilled shrimp, mango salsa, and a squeeze of lime.

Notes

Serve with black beans, Mexican rice, or grilled corn as side dishes. For a low-carb option, skip the tortillas and serve over shredded cabbage.
