Preparation
- Boil a large pot of salted water and cook the lo mein noodles according to package instructions. Drain and set aside.
- Allow the chicken breast to reach room temperature for even cooking.
- If using frozen vegetables, ensure they’re thawed and drained.
Cooking
- In a large skillet or wok, heat vegetable oil over medium-high heat until shimmering, approximately 1-2 minutes.
- Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to let it burn.
- Add the sliced chicken and cook for about 4-5 minutes, stirring frequently, until browned and no longer pink.
- Toss in the mixed vegetables and stir-fry for another 3-4 minutes until tender but still crisp.
- Stir in the cooked lo mein noodles, soy sauce, oyster sauce, and sesame oil. Mix well to coat all ingredients and heat through for an additional 2-3 minutes.
- Taste and season with salt and pepper as necessary.
- Plate the Garlic Chicken Lo Mein hot, garnished with freshly chopped green onions.
Notes
Avoid overcooking the vegetables to retain their crunch. For a spicy kick, consider adding chili oil or flakes to the dish.
