  • 1 lb chicken breast, sliced Boneless, skinless chicken thighs can be a flavorful substitute.
  • 2 cups mixed vegetables (like bell peppers, carrots, and snap peas) Fresh is best, but frozen mixed vegetables can work in a pinch.
Sauces and Oils
  • 2 tablespoons vegetable oil Peanut or canola oil also works if you want to add more flavor.
  • 4 cloves garlic, minced Fresh garlic provides the best flavor.
  • 3 tablespoons soy sauce Opt for low-sodium soy sauce if you're watching your salt intake.
  • 2 tablespoons oyster sauce This adds depth; feel free to use a vegetarian alternative if needed.
  • 1 tablespoon sesame oil This oil adds flavor and aroma.

Method
 

Preparation
  1. Boil a large pot of salted water and cook the lo mein noodles according to package instructions. Drain and set aside.
  2. Allow the chicken breast to reach room temperature for even cooking.
  3. If using frozen vegetables, ensure they’re thawed and drained.
Cooking
  1. In a large skillet or wok, heat vegetable oil over medium-high heat until shimmering, approximately 1-2 minutes.
  2. Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to let it burn.
  3. Add the sliced chicken and cook for about 4-5 minutes, stirring frequently, until browned and no longer pink.
  4. Toss in the mixed vegetables and stir-fry for another 3-4 minutes until tender but still crisp.
  5. Stir in the cooked lo mein noodles, soy sauce, oyster sauce, and sesame oil. Mix well to coat all ingredients and heat through for an additional 2-3 minutes.
  6. Taste and season with salt and pepper as necessary.
  7. Plate the Garlic Chicken Lo Mein hot, garnished with freshly chopped green onions.

Notes

Avoid overcooking the vegetables to retain their crunch. For a spicy kick, consider adding chili oil or flakes to the dish.
