Main Ingredients
  • 1 lb chicken breast, sliced Use organic if possible for better flavor
  • 2 cups mixed vegetables Bell peppers, broccoli, and carrots are great choices!
  • 3 tablespoons soy sauce Try low-sodium
  • 2 tablespoons chili sauce Adjust based on your spice preference
  • 1 tablespoon garlic, minced Fresh is best!
  • 1 tablespoon ginger, minced Brings wonderful depth
  • 2 tablespoons vegetable oil Or your choice of high smoke point oil
  • 1 teaspoon sesame oil The finishing touch!
  • 1 tablespoon green onions, chopped For garnish

Method
 

Cooking Instructions
  1. Heat 2 tablespoons of vegetable oil in a large pan over medium-high heat.
  2. Add 1 tablespoon garlic and 1 tablespoon ginger to the hot oil and sauté for 1 minute until fragrant.
  3. Toss in the sliced chicken breast and sear for 5-7 minutes until browned and fully cooked.
  4. Stir in 2 cups of mixed vegetables and cook for an additional 3-4 minutes until they are vibrant and slightly tender.
  5. Pour in 3 tablespoons of soy sauce and 2 tablespoons of chili sauce, mix, and let it bubble for a couple of minutes.
  6. Drizzle 1 teaspoon sesame oil and toss again, finishing with a sprinkle of 1 tablespoon chopped green onions.
  7. Serve atop a steaming pile of rice or noodles.

Notes

Consider marinating the chicken in soy sauce for a richer flavor. Store leftovers in an airtight container.
