  • 2 tbsp rice vinegar For that tangy zest.
  • 2 tbsp Szechuan chili paste or sauce Adjust to taste based on your heat preference.
  • 1 tbsp hoisin sauce Adds a hint of sweetness.
  • 1 tsp sugar Balances the flavors beautifully.
  • 1/2 cup chicken or vegetable broth Homemade or store-bought works.
Vegetables
  • 1/2 cup snow peas Trimmed for vivid color and crunchy texture.
  • Optional: Crushed peanuts or sesame seeds for garnish Adds delightful crunch.

Preparation
  1. Start by boiling a large pot of salted water. Add the noodles and cook according to package directions until al dente, usually 8-10 minutes. Drain and set aside, tossing with a bit of oil to prevent sticking.
  2. In a small bowl, combine the soy sauce, rice vinegar, Szechuan chili paste, hoisin sauce, sugar, and chicken or vegetable broth. Whisk until smooth and set it aside.
Cooking
  1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced ginger and garlic, and sauté for about 30 seconds until fragrant.
  2. Add the chopped green onions and snow peas to the skillet, stir-frying for 2-3 minutes until snow peas are tender yet crisp.
  3. Next, add the cooked noodles to the skillet along with the sauce mixture. Toss everything together for about 1-2 minutes until well coated and heated through.
  4. Serve your Easy Szechuan Noodles hot, garnished with crushed peanuts or sesame seeds if desired.

Notes

Fresh ingredients make a world of difference. For a vegetarian twist, use firm tofu instead of meat, and opt for vegetable broth. If you love a bit of zing, add a splash of lime juice just before serving!
