  • 300 g soft or silken tofu Make sure it's well-drained; organic varieties are recommended.
  • 1/4 cup dark brown sugar or white sugar Dark brown sugar enhances the chocolate flavor nicely.
  • 1/8 tsp table salt Balances the sweetness.
Optional Flavorings
  • to taste vanilla extract, espresso, orange zest, or liqueur Feel free to experiment with your favorite flavorings.
For Serving
  • fresh fruit (like raspberries or strawberries), crumbled cookies, or cake cubes These toppings add a perfect touch.

Method
 

Preparation
  1. Melt the chocolate in a heatproof bowl over a pot of simmering water for 5-7 minutes, stirring until smooth.
  2. In a food processor, mix the tofu, sugar, selected flavorings, and salt until ultra-smooth and creamy (1-2 minutes).
  3. Gradually whisk the tofu mixture into the melted chocolate until well-blended.
  4. For a lighter texture, optionally beat with an electric mixer on high for 1-2 minutes.
Chilling and Serving
  1. Portion the mousse into serving dishes, cover and refrigerate for at least 2 hours to set.
  2. Before serving, add toppings like fresh fruit, crumbled cookies, or cake cubes.

Notes

Use the best quality chocolate available. This mousse can be made a day in advance and stored in an airtight container for up to 3 days. Leftover mousse can be enjoyed as a quick dessert or snack.
