Preparation
- Melt the chocolate in a heatproof bowl over a pot of simmering water for 5-7 minutes, stirring until smooth.
- In a food processor, mix the tofu, sugar, selected flavorings, and salt until ultra-smooth and creamy (1-2 minutes).
- Gradually whisk the tofu mixture into the melted chocolate until well-blended.
- For a lighter texture, optionally beat with an electric mixer on high for 1-2 minutes.
Chilling and Serving
- Portion the mousse into serving dishes, cover and refrigerate for at least 2 hours to set.
- Before serving, add toppings like fresh fruit, crumbled cookies, or cake cubes.
Notes
Use the best quality chocolate available. This mousse can be made a day in advance and stored in an airtight container for up to 3 days. Leftover mousse can be enjoyed as a quick dessert or snack.
