Chipotle Ranch Chicken Bowls

Ingredients
  

For the Chicken and Sauce
  • 1 lb boneless skinless chicken breast, cut in half horizontally
  • 3/4 cup nonfat plain Greek yogurt Fage is recommended for creaminess
  • 1/4 cup light mayonnaise Hellmann's is recommended
  • 1 tsp apple cider vinegar
  • 1 canned chipotle pepper in adobo sauce Adjust to taste
  • 3 tbsp ranch seasoning Store-bought or homemade
For the Bowls
  • 2 cups cooked quinoa or rice Cauliflower rice for a lighter option
  • 2 cups shredded red cabbage For crunch
  • 1.5 cups canned black beans, rinsed and drained
  • 1 cup corn Frozen works great
  • 1 cup cherry tomatoes, chopped
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, freshly chopped
  • 1 whole avocado, chopped

Method
 

Make the Ranch Sauce
  1. Add the yogurt, chipotle pepper, apple cider vinegar, and ranch seasoning to a blender. Blend until smooth and creamy.
  2. Taste and adjust heat according to preference.
Marinate the Chicken
  1. Place chicken breasts in a bowl or resealable bag and pour half of the chipotle ranch sauce over them.
  2. Ensure chicken is well-coated and marinate for about 30 minutes.
Cook the Chicken
  1. Preheat a grill pan or outdoor grill to medium-high heat and cook chicken for 4-6 minutes per side until cooked through.
  2. Alternatively, cook in an air fryer at 400°F for 10-12 minutes.
Assemble the Bowls
  1. Start with a base of cooked quinoa or rice in a deep bowl.
  2. Layer on the shredded cabbage, black beans, corn, cherry tomatoes, green onions, cilantro, and sliced grilled chicken.
Drizzle
  1. Finish with a drizzle of the reserved chipotle ranch sauce and serve immediately.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. The flavors often improve over time.
