Method
Make the Ranch Sauce
- Add the yogurt, chipotle pepper, apple cider vinegar, and ranch seasoning to a blender. Blend until smooth and creamy.
- Taste and adjust heat according to preference.
Marinate the Chicken
- Place chicken breasts in a bowl or resealable bag and pour half of the chipotle ranch sauce over them.
- Ensure chicken is well-coated and marinate for about 30 minutes.
Cook the Chicken
- Preheat a grill pan or outdoor grill to medium-high heat and cook chicken for 4-6 minutes per side until cooked through.
- Alternatively, cook in an air fryer at 400°F for 10-12 minutes.
Assemble the Bowls
- Start with a base of cooked quinoa or rice in a deep bowl.
- Layer on the shredded cabbage, black beans, corn, cherry tomatoes, green onions, cilantro, and sliced grilled chicken.
Drizzle
- Finish with a drizzle of the reserved chipotle ranch sauce and serve immediately.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. The flavors often improve over time.
