Preparation
- Bring a pot of salted water to boil. Cook the noodles according to package instructions (about 5-7 minutes). Drain and set aside, reserving a little pasta water.
- In a large pan or wok, heat 2 tablespoons of vegetable oil over medium heat until shimmering (about 1 minute).
- Add the minced garlic and sauté until golden and fragrant (about 1 minute). Keep an eye on it to prevent burning.
- Stir in 1-2 tablespoons of chili paste and cook for another minute.
- Toss in the cooked noodles, soy sauce, vinegar, and sugar. Use tongs to mix everything together, ensuring each noodle is coated. Cook for another 2-3 minutes until warmed and slightly caramelized.
- Season with salt to taste and mix in the chopped green onions just before serving.
- Plate your spicy Chili Garlic Noodles and dig in! Feel free to drizzle more chili oil on top for an extra kick.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stovetop with a splash of water. You can prep the sauce ahead of time and store it in the fridge. For a gluten-free version, use gluten-free noodles.
