Preparation
- Cook the egg noodles according to package instructions until tender but still al dente (about 4-6 minutes for fresh noodles). Drain and set aside.
- In a large pan, heat approximately 2 tablespoons of vegetable oil over medium heat until shimmering.
- Add minced garlic into the oil and stir for about 30-60 seconds until it becomes golden and fragrant.
- Stir in red chili flakes and cook for an additional minute to maximize the flavor.
- Pour in the soy sauce and bring the mixture to a gentle simmer for 2-3 minutes.
Combining
- Add the cooked noodles to the pan and toss with tongs to coat well in the sauce.
- Season with salt to taste, and adjust according to preference.
- Garnish with fresh herbs before serving.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat on the stove with a splash of oil or water to revive texture. If noodles seem dry, add a splash of cooking water or another dash of soy sauce while tossing.
