  • 8 oz Egg Noodles Fresh or dried; fresh is preferred for texture.
  • 4 cloves Garlic Fresh; adjust quantity for taste.
  • 1 tbsp Red Chili Flakes Adjust according to heat tolerance.
  • 3 tbsp Soy Sauce Use low-sodium for better control of saltiness.
  • 2 tbsp Vegetable Oil A neutral oil like canola or sunflower.
  • 1 pinch Salt To taste.
Garnishes
  • 1/4 cup Fresh Herbs Cilantro or sliced green onions for garnish.

Method
 

Preparation
  1. Cook the egg noodles according to package instructions until tender but still al dente (about 4-6 minutes for fresh noodles). Drain and set aside.
  2. In a large pan, heat approximately 2 tablespoons of vegetable oil over medium heat until shimmering.
  3. Add minced garlic into the oil and stir for about 30-60 seconds until it becomes golden and fragrant.
  4. Stir in red chili flakes and cook for an additional minute to maximize the flavor.
  5. Pour in the soy sauce and bring the mixture to a gentle simmer for 2-3 minutes.
Combining
  1. Add the cooked noodles to the pan and toss with tongs to coat well in the sauce.
  2. Season with salt to taste, and adjust according to preference.
  3. Garnish with fresh herbs before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat on the stove with a splash of oil or water to revive texture. If noodles seem dry, add a splash of cooking water or another dash of soy sauce while tossing.
