- In a large bowl, mix together the Greek yogurt, mayonnaise, sour cream, honey, apple cider vinegar, poppy seeds, dijon mustard, salt, and pepper.
- Chop the cooked chicken breast, celery, and green onions. Aim for a dice-sized chop for easy scooping.
- Once your dressing is ready, add the chopped chicken, diced celery, dried cranberries, sliced almonds, and green onions to the bowl. Stir until well combined.
- Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
- Before serving, check seasonings and give it a quick stir. Serve on lettuce wraps, whole-grain bread, or crackers.
Notes
Ensure chicken is at room temperature for optimal mixing. Rotisserie chicken works wonderfully! Storage: can be kept in the refrigerator for up to 3 days in an airtight container.
