  • 2 tbsp low fat mayonnaise Adds creaminess without overpowering the yogurt.
  • 1 tbsp low fat sour cream Provides added tang and creaminess.
  • 1 tbsp honey A touch of sweetness to balance the flavors.
  • 2 tsp apple cider vinegar Adds critical acidity and tang.
  • 1 tsp poppy seeds Adds a fun texture and subtle flavor.

Preparation
  1. In a large bowl, mix together the Greek yogurt, mayonnaise, sour cream, honey, apple cider vinegar, poppy seeds, dijon mustard, salt, and pepper.
  2. Chop the cooked chicken breast, celery, and green onions. Aim for a dice-sized chop for easy scooping.
  3. Once your dressing is ready, add the chopped chicken, diced celery, dried cranberries, sliced almonds, and green onions to the bowl. Stir until well combined.
  4. Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
  5. Before serving, check seasonings and give it a quick stir. Serve on lettuce wraps, whole-grain bread, or crackers.

Notes

Ensure chicken is at room temperature for optimal mixing. Rotisserie chicken works wonderfully! Storage: can be kept in the refrigerator for up to 3 days in an airtight container.
