Method
 

Cooking the Chicken Kofta
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the ground chicken and break it up using a wooden spoon. Cook for about 5-6 minutes until it's browned and cooked through—look for no pink remaining.
  3. Stir in the parsley, garlic, cumin, coriander, dried mint, red pepper flakes, cinnamon, and allspice. Season well with salt and pepper. Cook for another 2-3 minutes until all spices are fragrant.
Assembling the Bowls
  1. While the kofta is cooking, prepare brown rice according to package instructions—fluff with a fork before serving.
  2. In bowls, start with a layer of the warm brown rice.
  3. Spoon the freshly cooked chicken kofta on top of the rice.
  4. Scatter the chopped cucumbers and tomatoes across the top.
  5. Finish each bowl with a dollop of hummus and sprinkle with feta cheese.
