Cooking the Chicken Kofta
- Heat the olive oil in a large skillet over medium-high heat.

- Stir in the parsley, garlic, cumin, coriander, dried mint, red pepper flakes, cinnamon, and allspice. Season well with salt and pepper. Cook for another 2-3 minutes until all spices are fragrant.
Assembling the Bowls
- While the kofta is cooking, prepare brown rice according to package instructions—fluff with a fork before serving.
- In bowls, start with a layer of the warm brown rice.
- Spoon the freshly cooked chicken kofta on top of the rice.
- Scatter the chopped cucumbers and tomatoes across the top.
- Finish each bowl with a dollop of hummus and sprinkle with feta cheese.
