Preparation
- In a medium-sized mixing bowl, combine 1 cup of Catalina dressing, 1/2 cup of brown sugar, 1/4 cup of soy sauce, 1 tablespoon of minced garlic, and 1 tablespoon of minced onion. Mix thoroughly until well blended.
- Place the 4 chicken breasts into a baking dish. Pour the prepared marinade over the chicken, making sure each piece is nicely coated.
- Cover the baking dish with plastic wrap or a lid and let it marinate in the fridge for at least 1 hour (or up to overnight for deeper flavor).
- Preheat your oven to 375°F (190°C) about 15 minutes before you’re ready to cook.
- After marinating, place the baking dish in the preheated oven. Bake for 25-30 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
- Remove the chicken from the oven and let it rest for 5 minutes before serving.
