Ingredients
  

For the Sauce
  • 1/2 cup mayonnaise Use a full-fat version for richer flavor (e.g., Hellmann's or Duke's).
  • 1/2 cup sweet chili sauce Found in the Asian products aisle.
  • Juice of 1 lime lime Fresh is best; bottled lime won't have the same zest.
  • 1 1/2 teaspoons sriracha sauce Adjust according to heat preference.
For the Pasta
  • 8 ounces spaghetti noodles Cook according to package directions, then drain.
For the Shrimp
  • 12 ounces medium shrimp Peeled and deveined, can be fresh or frozen.
  • 1 1/2 tablespoons olive oil Good quality extra virgin olive oil.
  • 1 tablespoon fresh garlic, minced Fresh garlic is preferred over powdered.
  • 2 teaspoons smoked paprika Adds a smoky note.
  • 1/2 teaspoon kosher salt For seasoning shrimp.
  • 1/2 teaspoon fresh cracked black pepper For a subtle kick.
  • 1/8 teaspoon red pepper flakes Optional, for extra heat.
  • Fresh chopped parsley or cilantro to taste chopped parsley or cilantro Optional garnish.

Method
 

Preparation
  1. In a small mixing bowl, whisk together the mayonnaise, sweet chili sauce, lime juice, and sriracha sauce until smooth.
  2. In a medium-sized bowl, toss together the shrimp, 1/2 tablespoon of olive oil, minced garlic, paprika, kosher salt, black pepper, and red pepper flakes (if using).
Cooking
  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the shrimp and cook gently for about 8-10 minutes until pink and opaque.
  2. With the skillet still on medium heat, add the hot spaghetti noodles and the sauce to the cooked shrimp. Toss everything together until coated.
Serving
  1. Garnish with fresh parsley or cilantro and serve immediately to enjoy the flavors.

Notes

Leftovers can be stored in an airtight container in the fridge for 2-3 days but do not freeze. You can also prep the shrimp and sauce ahead of time.
